COOKING: Chicken Mozzarella & Tomato Curry Soup

I believe sem break is making me more productive than usual.

I told you I’d make Chef Ramsey’s chicken mozzarella. It’s basically just cooked chicken coated with flour, raw egg and bread crumbs. Then top it off with cooked tomato, onion, parsley and olive oil. On top of each chicken, place that vegetable concoction as well as a piece of mozzarella and pop it in the oven until the cheese has melted. Simple!

Originally this was called crab meat bisque on my cookbook, but since I had no crab meat, I excluded that. Basically, this is soup made out of 300 oz condensed tomato soup (from the can), a handful of curry powder (measured to the taste, depending if I liked it), a few tablespoons of Worcester sauce (measured to the taste), 300mL of milk, and a few tablespoons of all-purpose cream. I added an extra can of whole-peeled tomatoes just because I had them. I added a bit of all the other ingredients because of that. Still, delish! :)

And voila, family dinner on Monday evening! Made from “whatever I have in my pantry”.
